Beet Noodles with Cilantro Yogurt Sauce
Last week Manuela and I joined Latino Connections for their PODER Health and Wellness Expo Roadshow. During the cooking show, we used spiralized beets which were a hit!

Beets are a great source of fiber, folate, and Vitamin C. They help support digestion, the immune system, and heart health. If you don't have access to spiralized beets or a spiralizer, simply use washed, chopped beets with the skin on.
Beets
1 pack spiralized beets
1-2 cloves organic Garlic, minced
1 organic Onion, chopped
3 tsp. organic Olive Oil
1 tsp. Sea Salt
1 tsp.Black Pepper
Sauce
1/4 cup of organic plain Yogurt
1 organic Avocado
1 organic Lime, juiced
1 bunch organic Cilantro, chopped
2 cloves organic Garlic, minced
1/4-1/2 tsp. Chili Powder (choose your level of heat!)
3 tbsp. water (add more if needed to mix well)
1 tsp. Sea Salt
1 tsp.Black Pepper
Directions
In a saute pan, add olive oil.
Add chopped onions and sweat onions.
Add garlic and sautee until golden.
Add beets and cook on medium heat for approximately 20 minutes or until medium-tender or your liking.
In a blender, add all Sauce ingredients. Blend well.
When beets are cooked, cool for 5 minutes.
Add sauce and serve.
