Yield: 8 Servings
Special Diet: Gluten Free (Vegan with substitutions)
8 medium sweet potatoes (combination of purple, white, and orange)
6 T. butter of choice
½ c. packed brown sugar
Chicken or vegetable broth to cover (approximately 4 cups)
Peel sweet potatoes and cut into large chunks.
Place sweet potatoes in a large pot. Cover with broth and pour water as needed to cover.
Bring to a boil. Lower heat to a simmer and cook until just tender.
Drain sweet potatoes in strainer. Rinse pot and place back on burner on low heat.
Melt butter and gently stir in sweet potatoes and brown sugar.
Transfer to serving bowl and enjoy!
