Summer Grilling Must-Haves

Summer is finally here and it’s time to break out the grill! Whether you’re using a charcoal or gas grill, it’s important to have the essentials.


Steak, Chicken, Sausages…where to start? When grilling steak or beef, I suggest using a good quality cut of meat. NY Strip steaks are perfect for grilling. When grilling chicken, I always remove the skin. Trim extra fat off of meats so they don’t ignite flames.

Vegetarian Options:

Portobello mushrooms, Tofurky or tofu-based sausages and hot dogs are great alternatives to meat. Cook mushrooms for 3-5 minutes on each side, until tender. Cook vegan sausages and hot dogs according to package directions.


I like to grill mushrooms, onions, and peppers seasoned lightly with salt and pepper before grilling.

Tip: Use a grill basket so small pieces don’t fall through the grates.

Seasonings & Sauces:

Keep it simple or kick it up with spices and sauces. I always keep these blends on hand:

Simple – Salt, pepper, garlic powder.

Spicy – Salt, pepper, cayenne, chili powder.

Barbeque – Brown sugar, cinnamon, salt, pepper, cayenne.

Seafood – Lemon Pepper, salt.

Wooden Skewers

Aluminum foil

Barbeque Sauce




One Marinade Fits All - This marinade is perfect for any meat or vegetable dish


  • 1/4 cup fresh lemon juice

  • 1/2 teaspoon red pepper flakes

  • 1/2 teaspoon cracked black pepper

  • 1/2 teaspoon coarse salt (kosher or sea)

  • 3 cloves garlic, minced

  • 1/4 cup coarsely chopped fresh parsley

  • 1/4 cup coarsely chopped fresh basil

  • 1/2 cup extra virgin olive oil


  1. Combine the lemon juice, hot pepper flakes, cracked pepper, and salt in a non-reactive (glass, ceramic, or stainless steel) bowl and whisk until the salt crystals are dissolved. Add the garlic, parsley and basil. Stir or whisk in the olive oil. Stir again before using.
